This is a great and healthy snack and/or lunch idea. I was looking to make something fast, healthy and delicious and came up with this!

1 ripe avocado
1 5 oz. can tuna (in water)
1 tablespoon red onion, chopped
1/2 rib celery, chopped
1 teaspoon garlic, chopped
1/4 cup grated parmesan cheese
Salt and pepper, to taste


Turn oven to broil
Cut avocado in half and remove pit
Remove about half of the avocado and set aside
Mix together removed avocado, tuna, garlic, celery, red onion and half of the cheese (1/8 cup)
Add a pinch of salt and pepper to mixture
Sprinkle a pinch of salt into each avocado half
Place tuna mixture in the avocados
Sprinkle wit the rest of the cheese
Broil for 10 minutes or until cheese starts to brown

Makes 2 boats… Enjoy!
